How can I remove fields like middle name, job title from the core form?

If your are referring to the form that appears in Drupal when you select "Create New Account," any fields on that form other than Username and Email Address are injected by one or more CiviCRM "Profiles". You can add or remove these by modifying the fields contained in the Profile(s) from Administer CiviCRM >> CiviCRM Profiles. For more information, see the email discussion and Profiles Admin.
