My Joomla front-end CiviCRM Profile forms aren't actually adding contacts to the database and the search form returns all contacts, ignoring the search criteria.

CiviCRM front-end features in Joomla require that you patch index.php to establish a session. Check out step 3 on Configuring Front-end Profile Listings and Forms in Joomla! Sites.
