Configuring the "standard installation" using Postfix and Amavis. Requires root access to your server.
CiviMail Alternate Configuration - for hosted servers: no root access or Amavis required, any MTA (experimental!)
This is an alternative return path (bounces, replies, etc) configuration only. You still need to set up the configuration to send mail out. Help debug this method on your platform/host.
